Vegan melon and rocket salad

Ingredients

For the salad:

  • 250 g watermelon
  • 250 g cantaloupe
  • 80 g cumber, deseeded
  • 1/2 avocado
  • 1 packet of organic MozzaVella
  • 1 handful of rocket
  • If desired: Pitted olives

For the dressing:

  • 5 tbsp olive oil
  • 1 tbsp cider vinegar
  • 1 tbsp balsamic vinegar
  • 1 tsp agave syrup or rice syrup
  • Pinch of salt
  • A bit of coarse pepper
  • If desired: 1 tsp coriander seeds, crushed
  • Lemon juice to taste

How it’s done

Slice the melon, cucumber and avocado. Slice the organic MozzaVella into slices. Wash the rocket and shake dry. Mix all the ingredients for the salad dressing together and add lemon juice and salt to taste. Put all ingredients into a large bowl, pour the dressing over the salad and enjoy.
