Ingredients

  • 1 round puff pastry
  • 3 eggs
  • 1 dl cream
  • 250 g ricotta
  • 100 g Filona cream cheese "herbs"
  • salt
  • Pepper from the mill
  • 1 tsp finely chopped
  • rosemary needles
  • 1-2 tbsp oil
  • 4 red onions
  • 50 g bacon, diced
  • rosemary needles, for the garnish

How it’s done

Preheat oven to 200 °C. Put the puff pastry in the baking pan, prick the pastry a few times with a fork. Beat eggs, add cream, ricotta and herb cream cheese, mix until smooth, season with salt and pepper, stir in rosemary. Peel and halve onions and cut into fine strips, saute in olive oil for a few minutes, let cool, stir in bacon, spread on pastry base. Pour the glaze over it. Place the quiche on the second lowest rack in the preheated oven, bake at 200 °C for about 30 minutes. Garnish with rosemary needles.
