Ingredients

  • 60g pizza and gratin cheese mix
  • 280g flour
  • 60g egg yolk
  • 120g milk
  • 16g yeast
  • 56g butter
  • 8g salt
  • 60g walnuts
  • 8g sugar
  • 4 egg yolk for glazing

How it’s done

Freshly baked brioche with a melted cheese centre.

Dissolve the yeast in lukewarm milk and mix all the ingredients into a dough. Leave to rest for about an hour. Mould the dough into balls of approx. 50 g each. Let to rest again for 30 minutes. Brush with the egg yolk and spread cheese over the top. Bake in the oven at 180°C for about 18 minutes.
